- Mise en Place — “Everything In It’s Place,” before you begin your cook. Put out all ingredients and needed utensils, everything pre-measured/portioned, at your station before you begin.
- Use focused breathing as you work.
- Use intentional motion — every move has a purpose.
- Be creative, curious, explore — have a little sense of adventure and imagination.
- Put everything into a learning perspective. “No mistakes; just learning.”
