These are my process photos from marinating a fresh (not frozen — if you freeze fish, the water molecules inside the muscle will expand and pummel the meat and make it mushy) Cod fillet in dill buttermilk, overnight in the fridge.

I dredged the marinated Cod in dill mayo, rolled it in Panko, and fried it in a salted pan with butter.
The result was that the fish was so tender it fell apart on the fork and melted in my mouth. It was a fresh summer breeze in my mouth, I could feel the river rushing over my bare feet as I sit on the bank and catching some bright sun on my face.

Happy fishing, river walking, eating great summer foods, with sunshine faces!
